Though typically a gore-filled thriller, Mads Mikkelsen reveals the one surprisingly delicious detail about filming the Hannibal TV show. Centering on Mikkelsen’s Hannibal Lecter and Hugh Dancy’s FBI profiler Will Graham as they work together on a variety of cases and find themselves entangled in a tense and secret-filled relationship, the horror show scored widespread acclaim in its three-season run. In expanding the lore of Thomas Harris’ novels, Hannibal dove deeper into Lecter’s love of gourmet cuisine, complete with intricately shot cooking sequences outdoing cooking shows on the likes of the Food Network, only with a decidedly human element.


While speaking with GQ to reflect on his most iconic characters, Mads Mikkelsen looked back on his time filming the Hannibal TV show. The actor revealed one surprisingly delicious detail about production in regard to the show’s production, having done all of his own cooking for its memorable food sequences, while also infusing a unique element to Lecter’s palate. I did it all, yeah, that’s all me doing the stuff, flipping and catching an egg there. That’s a lot of juggling in that, which I’m fairly good at myself. There was things that I didn’t know why I did them in the beginning, and then it makes sense later. Like, when he sniffs wine, everyone goes like [puts glass up to nose], he puts the glass away from him. I did it just to do something interesting, to be honest [chuckles], like, “That’s weird he’s doing that, let’s do it for fun.” And then, in reality, his nose is so sensitive, it has to be all the way out here.


Why Mikkelsen Remains The Best Hannibal Actor

In the 40-plus years since Harris’ first Lecter-focused novel was published, Hannibal has been brought to life on screen with a variety of performers beginning with Brian Cox in Michael Mann’s Manhunter followed by Anthony Hopkins’ Oscar-winning turn in The Silence of the Lambs and its two follow-ups, Hannibal and Red Dragon. While the latter two movies scored mixed reviews from critics, Hopkins’ performance as Lecter remained a consistent source of praise, setting a very high bar for any future actors to take on the mantle.

It then came as a welcome surprise to both horror genre fans and those who enjoyed Harris’ novels that Mikkelsen’s Hannibal would arguably surpass Hopkins in the NBC show. Praised for taking a subtler approach to Hannibal’s cannibalism and serial killer nature while also psychologically toying with Will and others around him, Mikkelsen’s take on the character led to audiences being more keen on seeing more of this secretive dynamic rather than the imprisoned psychopath many knew him for in prior adaptations.

It also helps that Mikkelsen’s run as the character in the Hannibal show earned more consistent praise than that of Hopkins, who went from an Oscar-winning debut to a poorly received sequel and modestly received prequel. Additionally, with Hannibal‘s cult following only having increased in the years since its cancelation, and the desire for a season 4 revival remaining high, the show being fresher in audiences’ minds is sure to be a factor in him ranking higher than his predecessors. One can only hope Mikkelsen can bring his gourmet cooking skills back to the screen in some capacity, be it Hannibal or another project.
